3 Easy and Healthy Apple Recipes

Hi Friends! I love apples and I love Fall! So today I’m sharing 3 easy, healthy apple recipes that are all gluten-free, dairy-free, delicious and so simple to make! Enjoy!

Gluten-Free Apple Carrot Muffins

Ingredients
  1. 1.5 cups shredded carrots
  2. 1 cup shredded apples
  3. 1 cup Bob's Red Mill Gluten-Free 1-to-1 baking flour
  4. 1/3 cup coconut sugar
  5. 1 teaspoon baking soda
  6. 1 teaspoon cinnamon
  7. 1/2 teaspoon sea salt
  8. 3 tablespoons ground flax seeds
  9. 1/4 cup coconut oil
  10. 3 tablespoons lemon juice
  11. 1/4 cup water
  12. 1 egg or vegan egg replacer
Instructions
  1. Add the egg, water, oil, flax seeds, baking soda, cinnamon, salt and sugar into a large bowl and whisk together.
  2. Then add the gluten-free flour, shredded carrots, apples and lemon juice and mix together.
  3. Add to a muffin pan and bake at 350 degrees Fahrenheit for 25 to 30 minutes.

Apple Butternut Squash Soup

Ingredients
  1. 1 large butternut squash
  2. 2 green or red apples
  3. 1/4 cup canned coconut milk
  4. 2 cups veggie soup stock
  5. 1/2 teaspoon sea salt
  6. 1/2 teaspoon pepper
  7. 1/2 teaspoon ginger
  8. 1/2 teaspoon turmeric powder
Instructions
  1. Core and chop the apples.
  2. Peel and chop the butternut squash.
  3. Add the butternut squash and apples to a soup pot with the coconut milk, soup stock and seasonings.
  4. Simmer for 15 to 20 minutes until soft.
  5. Add to a high speed blender and blend until smooth, serve and enjoy!
Notes
  1. If you prefer a thinner soup, feel free to use 3 cups of veggie soup stock.

Ingredients
  1. 4 red or green apples
  2. 1/2 cup rolled oats
  3. 1/3 cup coconut sugar
  4. 1/2 teaspoon cinnamon
  5. 1/2 teaspoon ground cloves
  6. 1 tablespoon vegan butter
  7. 1/4 cup hot water
Instructions
  1. Use a sharp paring knife to carefully remove the top of the apple core. Then use a spoon to scoop out the remaining apple core, be careful not to break through the bottom of the apple.
  2. Add the spices, oats and sugar to a small bowl and stir together.
  3. Place the apple into a baking dish and fill with the oat mix. Top each apple with a small scoop of vegan butter and fill the dish with the ¼ cup of hot water.
  4. Bake at 375 degrees Fahrenheit for about one hour, until apples are soft to the touch, enjoy!
