3 Easy, Healthy Summer Salad Recipes

Oh hello Summer! Sunshine, sunshine & more sunshine is my favorite! Of course what goes great with a sunny afternoon is a big summer salad! Today I’m sharing three easy summer salad recipes. Enjoy!

3 Bean Salad

Salad Ingredients
  1. 2 cups of fresh green beans
  2. 1/4 onion, sliced
  3. 1 can (15-ounces) garbanzo beans / chickpeas
  4. 1 can (15-ounces) kidney beans
  5. 1 yellow bell pepper
  6. 2 tablespoon fresh parsley, chopped
Salad Dressing Ingredients
  1. 3/4 up olive oil
  2. 2 tablespoons fresh lemon juice
  3. 2 tablespoons apple cider vinegar
  4. 1 tablespoon maple syrup
  5. 1 tablespoon garlic powder
  6. 1 pinch of sea salt and freshly ground pepper
Instructions
  1. Drain and rinse beans
  2. Wash green beans, cut off ends and cut in half
  3. Wash and slice bell pepper and onion
  4. To make salad dressing add salad dressing ingredients into a small mason jar, add a lid & shake together. You can also add ingredients to a bowl and whisk together
  5. Add all salad ingredients into a medium size bowl, drizzle with salad dressing and mix together! Enjoy!

Fresh Fruit & Mint Salad

Ingredients
  1. 2 cups of fresh strawberries
  2. 1 cup of fresh blueberries
  3. 1 lime
  4. 2 tablespoons fresh mint, chopped
Instructions
  1. Wash fruit
  2. Slice strawberries in half and chop mint
  3. In a medium size bowl add strawberries, blueberries, fresh lime juice & chopped mint
  4. Enjoy!
Notes
  1. This recipe is very flexible! Add as much mint, berries or lime as you personally prefer!

Summer Pasta Salad

Salad Ingredients
  1. 2 - 3 cups of cooked lentil pasta (I love Tolerant Eats or Modern Table!)
  2. 1/2 cup olives, sliced
  3. 1 cup cherry tomatoes, sliced
  4. 1 tablespoons fresh cilantro, chopped
  5. 1 can (15-ounces) black beans, drained & rinsed
  6. 1/4 onion, diced
Salad Dressing Ingredients
  1. 3/4 up olive oil
  2. 2 tablespoons fresh lemon juice
  3. 2 tablespoons apple cider vinegar
  4. 1 tablespoon maple syrup
  5. 1 tablespoon garlic powder
  6. 1 pinch of sea salt and freshly ground pepper
Instructions
  1. Add all salad ingredients into a medium size bowl, top with HGG's Lemon Vinaigrette Salad Dressing and mix together. Enjoy!
