Today on the Healthy Grocery Girl we’re sharing 8 Quick & Easy Winter soups! These soups are gluten-free, dairy-free and packed with plant-based protein, fiber and healthy fats! As many of you know… I LOVE SOUP! It’s easy to make, the leftovers are easy to heat and eat and soup is a great way to pack in so many nourishing ingredients, herbs and spices.

Below are 8 of our favorite HGG Winter Soups that are perfect for weeknight dinners, meal prepping and holiday parties! 

Winter Veggie Highlights:

Kale: Kale is a powerhouse veggie loaded with vitamin A, vitamin K and vitamin C. This nutrient dense vegetable is one of the most nutritious vegetables in the world! Kale also contains antioxidants that fight free-radicals, which aid in lowering inflammation and may help prevent the risk of developing certain diet related diseases. 

Butternut Squash: Butternut squash contains vitamin A, potassium and fiber. These nutrients support digestion, skin & eye health, and may even help lower blood pressure. Squash is a great winter vegetable because it can be used in both savory and sweet dishes! 

Potatoes: Did you know that potatoes contain more potassium than a banana?! Potassium helps regulate fluids within the body and also helps maintain normal blood pressure. Potatoes are also a great source of vitamin C, which aids in collagen production,  iron absorb and wound healing.
