A lazy Saturday morning, Sunday brunch or even a fun weeknight dinner, waffles are a love of mine, and can absolutely fit into a healthy lifestyle. It’s always about the ingredients used, and today I’m sharing how to make Whole-Grain Blueberry Waffles!

Ingredients:

1 cup Bob’s Red Mill 7 Grain Pancake and Waffle Mix

1 cup cold unsweetened non-dairy milk

2 tablespoons organic unrefined coconut oil

2 flax eggs (2 tablespoons organic ground flaxseed and 6 tablespoons water)

1/2 cup fresh blueberries

For Toppings:

1/2 cup fresh blueberries

100% pure maple syrup

Organic unrefined coconut butter (oil)

Directions: Make flax egg by combing ground flax with water in a small bowl, give a good stir and let sit for 2-3 minutes to congeal. Meanwhile, combine pancake / waffle mix into a medium size bowl with milk and coconut oil and mix together evenly. Add in flax egg and mix again. Lastly fold in fresh blueberries. Pour batter into a hot waffle maker and let cook until waffle light indicates waffles are complete. Top with fresh blueberries if you desire as well as spread with coconut butter (oil) and pure maple syrup.
