
Easy Lo Mein Noodle Recipe
Happy New Year’s Eve! Today I’m sharing how to make a homemade version of my favorite NYE’s dish… Lo Mein Noodles! This dish is easy to create & makes great leftovers! Enjoy!

Easy Lo Mein Noodles

The perfect NYE dinner! This recipe can be vegan if you choose Udon Noodles in place of traditional Lo Mein noodles

How To Make Easy Lo Mein Noodles
- 4 oz. Udon Noodles (or Lo Mein Noodles)
- 2 tablespoons of coconut oil
- 1 red bell pepper
- 1/2 pound of mushrooms
- 1/2 of a small red onion
- 3 cloves garlic
- 1 cup of snow peas
- Sesame seeds for topping
How To Make Lo Mein Sauce
- 3 tablespoons of coconut liquid amino
- 1 tablespoon of sriracha sauce
- 1 tablespoon of maple syrup
Instructions
- First you'll want to par cook your noodles. Boil water in a large pot and add the noodles, cook for 6 to 8 minutes
- Wash, chop and prep all of your vegetables
- In a small bowl, stir all 3 sauce ingredients together
- Heat 1 tablespoon of the coconut oil in a large sauce pan over medium heat
- Add the bell peppers, onion and mushrooms and cook for 4 minutes with the lid on
- Add the garlic and snow peas and cook for another 2 minutes with the lid off
- Toss in the par cooked noodles, add the sauce and the last tablespoon of coconut oil and cook stirring occasionally until the sauce reduces and absorbs into the noodles (around 2 minutes)
- Turn off the burner and add in the spinach and stir or fold the ingredients together
- Plate or bowl your easy Lo Mein noodles and top with sesame seeds!
