Hi Friends! Welcome back to the blog. As the temperatures start to drop, there is nothing better than to cozy up to some warm soup! Today we are sharing a healthy homemade favorite, Lemon Chicken & Rice Soup! This simple one pot recipe is perfect for the entire family!

Lemon Chicken & Rice Soup

Ingredients
- 4 cups chicken broth
- 1 cup water
- 1 Limoneira lemon, juiced
- 1 cup brown rice
- 1 cup diced onion
- 2 celery stalks, diced
- 3 large carrots, diced
- 1 tablespoon red palm oil
- 1 tablespoon dried basil
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 chicken breast, chopped
Instructions
- In a large soup pot, add oil over medium heat
- Add in diced onion and garlic and saute for 3 minutes
- Add in chopped carrots and celery and saute for 5 minutes
- Add in the rest of the ingredients, cover and let simmer for 25-35 minutes
- Enjoy
