HOMEMADE LEMON CHICKEN & RICE SOUP

Hi Friends! Welcome back to the blog. As the temperatures start to drop, there is nothing better than to cozy up to some warm soup! Today we are sharing a healthy homemade favorite, Lemon Chicken & Rice Soup! This simple one pot recipe is perfect for the entire family!

Lemon Chicken & Rice Soup

Ingredients
  1. 4 cups chicken broth
  2. 1 cup water
  3. 1 Limoneira lemon, juiced
  4. 1 cup brown rice
  5. 1 cup diced onion
  6. 2 celery stalks, diced
  7. 3 large carrots, diced
  8. 1 tablespoon red palm oil
  9. 1 tablespoon dried basil
  10. 2 garlic cloves, minced
  11. 1/2 teaspoon salt
  12. 1/2 teaspoon pepper
  13. 2 chicken breast, chopped
Instructions
  1. In a large soup pot, add oil over medium heat
  2. Add in diced onion and garlic and saute for 3 minutes
  3. Add in chopped carrots and celery and saute for 5 minutes
  4. Add in the rest of the ingredients, cover and let simmer for 25-35 minutes
  5. Enjoy
