LEMON COCONUT CHICKPEA SOUP

Lemon Coconut Chickpea Soup

Ingredients
  1. 1 tablespoon coconut oil
  2. 1/2 onion, diced
  3. 3 large carrots, diced
  4. 3 celery stalks, diced
  5. 2 cups water
  6. 1 cup coconut milk
  7. 1 Limoneira lemon
  8. 1/2 teaspoon dried basil
  9. 1/2 teaspoon salt
  10. 1/2 teaspoon pepper
  11. 1 (15-ounce) can of chickpeas, drained and rinsed
  12. 1/2 cup dry brown rice
Instructions
  1. In a large soup pot over medium heat, add coconut oil and diced onion and sauté for 5 minutes
  2. Add in carrots and celery and sauté for 10 minutes
  3. Add in water, coconut milk, juice from lemon, basil, salt, pepper, chickpeas and brown rice
  4. Stir until everything is combined and simmer on low for 30 minutes or until rice is tender
  5. Enjoy
