
Mango Salsa & Tortilla Chips

I’m posting my weekly cooking video a little early this week… Today’s video is picnic themed, and I am sharing how to make a yummy Mango Salsa with Homemade Tortilla Chips! This recipe also goes great with a summer salad and sparkling strawberry lemonade which you can learn how to make thanks to Shannon Sullivan! That’s right today I’ve collaborated with my friend and fellow YouTuber Shannon for a 2 part video series where we both are sharing how to make healthy picnic foods! - 2 cups cherry tomatoes
- 2 champagne mangos
- 1/2 white onion
- 1 fresh lime, juiced
- Fresh cilantro, to taste
- A pinch of sea salt
- 8 Organic corn tortillas
- 1 tablespoon Organic unrefined coconut oil
- A pinch of sea salt
- To make salsa, wash and dice tomatoes, mango and onions and add into a bowl. Add washed and diced cilantro as well as lime juice and sea salt into the bowl and mix together evenly.
- To make tortilla chips, preheat the oven to 500 degrees Fahrenheit. Then cut tortillas into quarters. Place on a baking sheet and drizzle with coconut oil and sea salt. Make sure tortillas are evenly coated. Place in the oven to bake for 5 minutes. Let cool before enjoying.
