Prune Oatmeal To-Go Cups
We all have busy, full lives and… get hungry! It’s frustrating to not have a satisfying and nourishing option available when hunger hits. I love making a batch of these Prune Oatmeal To-Go Cups and keeping them in my fridge, that way I always have a quick healthy choice ready to go whether I’m chasing my daughter around the house (she’s so fast I barely sit down these days!), powering through some work emails or heading out the door to run an errand. They’re great on their own or warmed and topped with nut butter for added protein, fiber and healthy fats.
Also, did you know that May is National Osteoporosis Month? I know… not the most glamorous of holidays, but bone health is so important! Bones play many roles such as providing our body with structure, protecting organs and anchoring muscle. Most people reach peak bone mass around the age of 30 years old. Bone growth continues to build after the age of 30, however statistically you lose slightly more bone than you gain! Bone health is important to prevent Osteoporosis, a condition that causes weak and brittle bones. Weak and brittle bones are more prone to a fracture or breaking. Today’s recipe includes ingredients that are not only nourishing and filling, but they also support bone health! Yay!
The Incredible Benefits of Oats!
Oats contains a soluble fiber known as Beta-Glucan which creates a gel-like consistency within the digestive tract. This gel-like consistency can benefit the body by helping to reduce LDL and total cholesterol levels, increase satiety and feeling full as well as support good gut bacteria. Because oats are so filling and fibrous they are a wonderful staple for those with weight loss goals and can help regulate bowel movements. I recommend rolled or steel cut oats.
The Power of Prunes!
I love prunes, they are naturally sweet, packed with vitamins, minerals and fiber. Prunes are also a great way to support bone health. In fact, research suggests that eating 5-6 prunes each day may help to prevent bone loss. This is especially helpful for individuals who follow a dairy-free diet. Additionally, prunes contain potassium, magnesium and vitamin K all which are also important for bone health. Lastly, prunes are a delicious way to naturally flavor recipes such as my Oatmeal To-Go Cups! My go-to brand for prunes is always Sunsweet, they’re always so plump and delicious.
- 1 cup non-dairy milk
- 2 eggs or vegan egg substitutes
- 1 tablespoon lemon juice
- ¼ cup 100% real maple syrup
- ⅓ cup Sunsweet Amaz!n Diced Prunes
- 1 cup rolled oats
- 1 cup oat flour (rolled oats ground in a high-speed blender)
- 1 teaspoon baking soda
- ¼ teaspoon sea salt
- ½ teaspoon ground ginger
- ½ teaspoon ground cinnamon
- Add the non-dairy milk, eggs, lemon juice, maple syrup and Sunsweet Amaz!n Diced Prunes into a large bowl and whisk together.
- Then add the rolled oats, oat flour, baking soda, salt, ginger and cinnamon and stir together until well mixed.
- Scoop into a non-stick muffin pan and add a few diced prunes as well as a dash of cinnamon to the top of each.
- Bake in a preheated oven at 350 degrees Fahrenheit for 25 minutes.
- Let cool before enjoying!
