PUMPKIN PRUNE LOAF

Hi Friends! Welcome back to the blog! It’s officially that time of year when it’s socially acceptable to have pumpkin at every meal. Pumpkin smoothies, pumpkin spice lattes, pumpkin chili and my current favorite… Pumpkin Prune Loaf! This flavorful loaf is perfect for fall and also for celebrating World Osteoporosis Day! That’s because this loaf contains my not-so-secret ingredient to support bone health… prunes! Prunes also give this loaf an incredible rich, soft texture.

Research suggests that eating 5-6 prunes each day may help to prevent bone loss! Sunsweet Amaz!n Prunes are an all-natural source of fiber, with 3 grams of fiber per serving, and only 100 calories. Sunsweet Amaz!n Prunes have no added sugar and compared to other dried fruit prunes are lower in naturally occurring sugar and have a low glycemic index of only 29. This means they are digested and absorbed slowly by the body, which helps to sustain energy over a longer period of time compared to foods with a higher glycemic index. PUMPKIN PRUNE LOAF
Serves 8

DRY INGREDIENTS
  1. 1 1⁄2 cup gluten free 1-to-1 baking flour 1⁄4 cup coconut sugar
  2. 2 teaspoons pumpkin pie spice
  3. 1 teaspoon baking soda
  4. Pinch sea salt
WET INGREDIENTS
  1. 3⁄4 cup Sunsweet Amaz!n diced prunes
  2. 3⁄4 cup Sunsweet Amaz!n prune juice
  3. 1⁄2 cup pumpkin puree
  4. 2 eggs or flax eggs
  5. 1 tablespoon of fresh squeezed lemon juice
Instructions
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Add all of the dry ingredients to a medium bowl and whisk together.
  3. Add all of the wet ingredients to a large bowl and whisk together. Add the dry mix to the wet mix and stir until well combined.
  4. Pour into a batter into a loaf pan and bake in the oven for 50 minutes to 1 hour. Let sit 15 minutes before slicing.
  5. Enjoy!
