Pumpkin Seeds

Oh hello there! Now that it’s October you probably will be picking up a pumpkin sometime soon! If you decide to carve your pumpkin, you may be wondering what to do with all the seeds? Today I am sharing how to roast pumpkin seeds with 3 yummy flavors!

Pumpkin seeds are packed with zinc ( immune boosting!), protein, fiber & many other vitamins and minerals that help boost our overall health. They are a great little snack or top on salads!

Salty Pumpkin Seeds

Ingredients

  • 1 cup pumpkin seeds
  • 1 teaspoon coconut oil
  • Sea salt to taste

Instructions

  • Preheat the oven to 350 degrees Fahrenheit
  • Add pumpkin seeds to a greased baking sheet (I use coconut oil)
  • Roast for 30 - 45 minutes
  • In a medium size bowl add coconut oil & sea salt and mix together

Pumpkin Spice Pumpkin Seeds

  • 1 teaspoon coconut oil
  • 1 tablespoon coconut sugar
  • 1 teaspoon pumpkin pie spice

Instructions

  • Preheat the oven to 350 degrees Fahrenheit
  • Add pumpkin seeds to a greased baking sheet (I use coconut oil)
  • Roast in the oven for 30 - 45 minutes
  • Transfer to a medium size bowl and mix with coconut oil, coconut sugar & pumpkin pie spice

Spicy Pumpkin Seeds

  • 1 teaspoon paprika
  • 1 teaspoon cumin

  • Preheat the oven to 350 degrees Fahrenheit
  • Add pumpkin seeds to a greased baking sheet (I use coconut oil)
  • Roast for 30 - 45 minutes
  • Transfer seeds to a medium size bowl and drizzle with coconut oil, chili powder, paprika, cumin & mix together
