What’s for lunch?! How about Healthy Grocery Girl’s Quick Veggie Wrap?!

I often like to eat a wrap for lunch because it’s quick, healthy and delicious! It is also a great way to eat more GREENS during the day. I love my greens! I make this meal when I need just a little something {and a little something in a hurry} to keep me going. If I’m really hungry, I’ll have a side of black bean soup, lentil soup, add beans like chick-peas into my wrap and / or add some slices of avocado!

Healthy Grocery Girl’s Quick Veggie Wrap

Makes 1

Ingredients:

1 organic tortilla, I like Sonoma or Udi’s!

2 handfuls of fresh greens, I like Organic Girl baby kale, super greens and mixed greens

2 tablespoons of hummus, I like Lilly’s Original

Slices of fresh veggies, whatever you have on hand! In this recipe I used tomatoes and cucumbers

1 small handful of micro-greens, or any greens you have one hand!

Organic spicy brown mustard

Directions:

Spread hummus on tortilla

Next layer with greens, fresh cut vegetables, top with micro-greens and finish with mustard

Fold into a wrap, and enjoy!

 

This recipe can easily be altered depending on whatever fresh ingredient you have on hand. Easily swap hummus for avocado or add sliced sweet bell peppers instead of tomatoes. Olives are also a great addition!
