With a few weeks left of summer, I’ve been making the most of it with these quick and healthy Summer Veggie Rolls with Thai Almond Sauce! The almond sauce is great because almonds, being a nut, contain protein which helps this light meal actually be quite satisfying! 

Veggie Rolls With Thai Almond Sauce

Summer Rolls With Thai Almond Sauce
Serves 2
This recipe is great as an appetizer, snack or as a light lunch!
  1. 6 rice papers
  2. 6 romaine lettuce leaves
  3. 2 medium carrots, thinly sliced
  4. 1 cucumber, thinly sliced
  5. 1/4 purple cabbage, thinly sliced
To Make Thai Almond Sauce
  1. 1 cup coconut milk (from a can)
  2. 1/4 cup coconut liquid aminos
  3. 1/2 cup maple syrup
  4. 1/2 cup lime juice
  5. 1/2 cup almond butter
  6. 1/2 teaspoon garlic powder
  7. 1/2 teaspoon chili powder
  1. Dip rice papers in warm water and then lay flat on a cutting board
  2. Place veggies of choice such as romaine lettuce, carrots, cucumber and purple cabbage on top and tightly roll the rice paper
To Make Thai Almond Sauce
  1. Add all ingredients into a blender and blend on high for 10 - 15 seconds
  2. Enjoy!
