Turmeric Energy Bites – Easy Snack Recipe!

I love snacks. Mini snacks between meals keep my energy levels up and help me avoid brain fog. If there are two categories I’m always looking for a “better” option it’s crackers and snack bars! I love both, and I’m always on the search for another great choice. When I feel like what I’m looking for just doesn’t exist – I usually turn to the kitchen to make my own. Energy bites are a favorite of mine because they are so simple to make, packed with real whole foods and I can easily adjust the recipe to have more protein, fiber, healthy fats and change up the flavor.

Turmeric is a nutrient packed ingredient I try to incorporate into my diet at least once a week, if not daily! Whether I’m adding it to smoothies, soups or snacks bites… It’s versatile and packed with nutrition. Ingredients
  1. 30 apricots (about 1 ½ cup)
  2. 1 ¼ cup rolled oats
  3. ⅓ cup almonds
  4. ¼ cup unsweetened shredded coconut
  5. 1 tablespoon unrefined coconut oil
  6. 1 teaspoon vanilla extract
  7. ½ teaspoon ginger powder
  8. 1 teaspoon (about 2 servings) MegaFood Daily Turmeric Nutrient Booster Powder
  9. 1 tablespoon filtered water
Instructions
  1. Add all ingredients to a food processor and pulse until crumbling
  2. Scoop ¼ cup crumbles into your clean hands and squeeze together, roll into balls.
  3. Store in the refrigerator and enjoy!
