Veggie Burgers 3 Ways

Today’s video is all about veggie burgers & I’ll be sharing with you 3 different easy, healthy & delicious recipes! Of course we’re pairing these burgers with Alvarado Street Bakery Hamburger Buns which are made with sprouted wheat! Watch today’s episode & view / print the recipes below!

Black Bean Veggie Burgers

BURGER INGREDIENTS
  1. 1 can (15-ounces) black beans
  2. ¼ cup oats
  3. ½ cup of oat flour (1 cup of oats)
  4. 3 tablespoons of ground flax seeds
  5. 1/3 cup warm water
  6. 3 garlic cloves, minced
  7. ½ cup chopped onion
  8. 1 (4-oz) can of green chiles
  9. 2 tablespoons of black strap molasses
  10. Coconut oil, sea salt & pepper
TOPPINGS
  1. Ketchup
  2. Mustard
  3. Lettuce
  4. Tomato
  5. Red Onion

Instructions
  1. Add one tablespoon of coconut oil to a stove top pan over medium heat, add your chopped onion and minced garlic cloves. Sauté for 3-4 minutes until onions start to brown. While the onion & garlic cooks, in a large mixing bowl add 3 tablespoons of ground flax seeds with 1/3 cup of warm water and let sit for 3 minutes. Next add a ½ cup of oats into a high-speed blender or food processor and pulse until you have created oat flour, then add the remaining oats and pulse one or two more times. The goal is to have a variety of oat sizes, a mix of fine flour, some ground oats and some whole oats, this helps with the texture of the burger patties! Next add 80% of the black beans, drained and rinsed to the large mixing bowl with the flax seeds and mash with a potato masher until you have created a paste. If you do not have a potato masher you can use a fork or blender! Then add your ground oats, sautéed onions and garlic, remaining whole black beans and all other ingredients into the mixing bowl with the black bean paste and stir everything together until well mixed. Form the mixture into six burger patties, I use a 1/3 measuring cup to help portion and form the patties. Place patties on a cookie sheet with parchment paper. Roast in a preheated oven at 350 degrees Fahrenheit for 10-15 minutes on each side. You can also grill these, but I would recommend roasting them in the oven for 10 minutes first to firm them up before placing them on the grill.

BBQ Cauliflower Burger

BURGER INGREDIENTS
  1. 1 medium cauliflower
  2. BBQ Sauce
TOPPINGS
  1. Lettuce
  2. Tomato
  3. Red Onion
  4. BBQ Sauce (optional to add more!)
  5. Alvarado Street Bakery Hamburger Buns
Instructions
  1. Rinse cauliflower and remove the stem. Next cut one inch thick ‘steaks’ from the center of the cauliflower head. With a small or medium head you should be able to get two or maybe three steaks. Next marinate the ‘steaks’ in BBQ sauce, ideally overnight, but at least for 30 minutes. These cauliflower burgers can be roasted in a 400 degree oven or cooked in a sauté pan, but my favorite way to make cook them is on the grill. Cooking time depends on your texture preference and grill temperature, you are looking for the edges to blacken slightly and the cauliflower to soften slightly, about 5-10 minutes per side.

Portobello Mushroom Burger

BURGER INGREDIENTS
  1. 1 portobello mushroom
  2. 1 teaspoon coconut oil
TOPPING INGREDIENTS
  1. Lettuce
  2. Tomato
  3. Red Onion
  4. Mustard
  5. Ketchup
  6. Alvarado Street Bakery Hamburger Buns
Instructions
  1. Before cooking your portobello mushrooms, remove the stem and scrap away the gills on the bottom, then give them a good rinse. Again you can roast or but my favorite is to cook them on the grill with a small amount of coconut oil. Grill bottoms up on a hot grill for about 10 minutes then enjoy!
